Koji 糀 is the essence of Japanese fermentation, extracting natural umami from seasonal Osaka ingredients. A tiny microorganism essential in miso, soy sauce, and more.

Shojin Ryori 精進料理, rooted in Zen practice, finds balance through the Rule of Five: tastes, colors, preparation methods, and senses. All ingredients at ODORU are plant-based.

Musubu 結ぶ is a concept deeply rooted in Japan itself. Musubu creates Wa 和, Japanese harmony, and within that harmony, balance between people, nature, and spirit becomes essential.

We let the koji dictate the rhythm of the meal; time is our quietest ingredient at the counter.
