ODORU is a reservation-only fermented degustation bar where every meal is a journey of discovery and delight.
The name ODORU 躍 means excitement, a dance of vitality that mirrors the spirit of our dishes. At ODORU, this essence is infused into every element of your experience, where tradition and wisdom intertwine to bring you food that nourishes both body and soul.
Drawing from the Japanese concept of Nyobo Kotoba 女房詞 the art of the kitchen and the language of food, we celebrate the culinary heritage of Okazu おかず, where each dish becomes a harmonious blend of taste, texture, and tradition. Nyobo Kotoba, developed during Japan's Heian period (8th-12th centuries), is a poetic "language of the kitchen" that elevated daily life through refined expression. Okazu refers to the side dishes that complement rice, emphasizing balance in flavor, texture, and presentation, which are pillars of Japanese cuisine. Together, these concepts reflect the artistry, harmony, and cultural depth of Japan’s culinary traditions.
Our dishes are rooted in the timeless principles of Shojin Ryori 精進料理, the Zen Buddhist tradition of mindful cooking, and the Shinto reverence for rice as a symbol of life and prosperity. Seasoned with fermented Koji 糀 and sourced from the freshest Japanese domestic vegetables and ingredients, our food reflects simplicity, lightness, and the vibrant rhythm of nature. Following the Rule of Five, five colors; green, yellow, red, black, and white. And five flavors,sweet, sour, salty, bitter, and umami, our menu creates a sensory dance on every plate, which also nourishes our bodies. In accordance with the rule of five, our Shojin ryori avoids the five pungent roots, onions, garlic, scallions, chives, and leeks, as they are considered to disrupt harmony and balance in traditional Buddhist cuisine

Tamie Wakamiya, founder of Japanese Fermented Degustation Bar ODORU 躍, With years of apprenticeship and hands-on experience in the Japanese culinary world invites you to embark on a heartfelt journey through the rich traditions of Japanese cuisine.
Surrounded by a vibrant community of culinary professionals, Tamie continues to refine her expertise through extensive travels. Her journeys not only inspire her cooking but also allow her to handpick the finest ingredients and products, ensuring each dish reflects the season and show case finest Japanese produce.
Her passion for food is deeply influenced by her time living and traveling abroad. Tamie believes that true immersion in a culture comes from meaningful connections, and dining offers an extraordinary way to stimulate all five senses, creating lasting memories.
Born and raised in Osaka, a city she adores anew every day, Tamie infuses the flavors of her hometown into her dishes. Her menu celebrates the essence of local Kansai umami and dashi, while showcasing the unique beauty of fermented foods and seasonings that are quintessentially Japanese. Inspired by Buddhist cuisine, she emphasizes domestic ingredients and recipes that are rich in Macrobiotic.
Beyond the plate, Tamie seeks to share the cultural richness of Japanese dining. Guests at ODORU can enjoy a mini-lesson in dining traditions, deepening their appreciation for the artistry and philosophy behind each dish.
